Scrambled Eggs and Lox Breakfast Bagels

Ingredients:
4 EGGS
1/4 cup milk
1/4 tsp. salt
Dash pepper
2 tsp. butter
2 bagels, split, toasted
1/4 cup spreadable onion & chive cream cheese
4 thin slices smoked salmon (3 to 4 oz.)

Here's How:
  1. BEAT eggs, milk, salt and pepper in medium bowl until blended.
  2. HEAT butter in large nonstick skillet over medium heat until hot. POUR IN egg mixture. As eggs begin to set, GENTLY PULL the eggs across the pan with an inverted turner, forming large soft curds. CONTINUE cooking - pulling, lifting and folding eggs - until thickened and no visible liquid egg remains. Do not stir constantly.
  3. SPREAD bagels with cream cheese. TOP each with 1 salmon slice and 1/4 of the eggs.

Cereal Bowl Egg and Cheese Breakfast Burrito

Ingredients:
1 flour tortilla (6-inch)
1 EGG
1 Tbsp. shredded Mexican cheese blend
1 Tbsp. salsa

Here's How:
  1. LINE 2-cup microwave-safe cereal bowl with microwave-safe paper towel. PRESS tortilla into bowl. BREAK egg into center of tortilla. BEAT egg gently with a fork until blended, being careful not to tear tortilla.
  2. MICROWAVE on HIGH 30 seconds; stir. MICROWAVE until egg is almost set, 15 to 30 seconds longer.
  3. REMOVE tortilla with paper towel liner from bowl to flat surface. TOP egg with cheese and salsa. FOLD bottom of tortilla over egg, then fold in sides.

Coffee Cup Scramble

Ingredients:
2 EGGS
2 Tbsp. milk
2 Tbsp. shredded Cheddar cheese
Salt and pepper

Here's How:
  1. COAT 12-oz. microwave-safe coffee mug with cooking spray. ADD eggs and milk; beat until blended.
  2. MICROWAVE on HIGH 45 seconds; stir. MICROWAVE until eggs are almost set, 30 to 45 seconds longer.
  3. TOP with cheese; season with salt and pepper.

PB&J Crunchy French Toast

Ingredients:
2 EGGS
3 Tbsp. milk
4 slices day-old bread
1/2 cup finely chopped peanuts

Here's How:
  1. BEAT eggs and milk in shallow dish until blended. SOAK 1 bread slice at a time in egg mixture, turning once; dip each slice into peanuts to coat both sides.
  2. COAT large nonstick skillet with cooking spray; heat over medium heat until hot. PLACE 2 bread slices in skillet. COOK over medium to medium-low heat until golden brown and no visible liquid egg remains, 2 to 3 minutes per side. Adjust heat as necessary so that peanuts do not burn.
  3. CLEAN skillet. REPEAT to cook remaining bread.

Egg and Cheese Waffle Sandwich

Ingredients:
2 frozen round waffles (4-inch)
1 EGG, beaten
1 slice co-Jack OR American cheese

Here's How:
  1. HEAT oven to 400°F. Generously COAT baking sheet with cooking spray. PLACE waffles on baking sheet.
  2. SPOON egg over waffles, spreading to fill cavities. BAKE in 400°F oven until egg is set and waffles are crisp, 10 to 12 minutes.
  3. TOP one waffle with cheese. COVER with remaining waffle and press together. LET STAND 1 minute to allow cheese to melt.

Apple Cinnamon Oatmeal with an egg boost

Ingredients:
1 EGG
1/3 cup milk
1 pkg. (1.23 oz.) apples & cinnamon instant oatmeal
1/4 cup vanilla yogurt

Here's How:
  1. BEAT egg and milk in 2-cup microwave-safe bowl until blended. STIR IN oatmeal.
  2. MICROWAVE on HIGH until liquid is absorbed and egg is set, 1-1/2 to 2 minutes; stir. TOP with yogurt.

Easy Egg Breakfast Quesadillas

Ingredients:
1/2 cup shredded Mexican cheese blend (2 oz.)
2 whole wheat OR flour tortillas (7-inch)
4 slices Canadian-style bacon (2-1/2 oz.)
4 EGGS, beaten
Salsa

Here's How:
  1. SPRINKLE 1/4 cup cheese on one side of each tortilla. TOP each with 2 bacon slices.
  2. COAT large nonstick skillet with cooking spray; heat over medium heat until hot. POUR IN eggs. As eggs begin to set, GENTLY PULL the eggs across the pan with an inverted turner, forming large soft curds. CONTINUE cooking - pulling, lifting and folding eggs - until thickened and no visible liquid egg remains. Do not stir constantly.
  3. SPOON eggs on top of bacon, dividing evenly. FOLD tortillas over filling to cover, pressing gently.
  4. CLEAN skillet. COAT with cooking spray; heat over medium-low heat until hot. TOAST quesadillas just until cheese is melted, about 1 to 2 minutes per side. CUT into wedges; serve with salsa.

Spinach, Ham and Cheese Omelet

Ingredients:
2 EGGS
2 Tbsp. water
1 tsp. butter
Salt and pepper
1/4 cup shredded Italian cheese blend (1 oz.)
1/4 cup baby spinach
1/4 cup finely chopped ham

Here's How:
  1. BEAT eggs and water in small bowl until blended.
  2. HEAT butter in 7 to 10-inch nonstick omelet pan or skillet over medium-high heat until hot. TILT pan to coat bottom. POUR IN egg mixture. Mixture should set immediately at edges.
  3. GENTLY PUSH cooked portions from edges toward the center with inverted turner so that uncooked eggs can reach the hot pan surface. CONTINUE cooking, tilting pan and gently moving cooked portions as needed.
  4. When top surface of eggs is thickened and no visible liquid egg remains, season with salt and pepper. PLACE cheese on one side of omelet; top with spinach and ham. FOLD omelet in half with turner. With a quick flip of the wrist, turn pan and INVERT or SLIDE omelet onto plate. SERVE immediately.

Mini Breakfast Pizzas

Ingredients:
4 EGGS, beaten
1/3 cup pizza sauce
2 English muffins, split, toasted
1/2 cup shredded Italian cheese blend (2 oz.)
Dried oregano leaves

Here's How:
  1. HEAT oven to 450°F. COAT large nonstick skillet with cooking spray; heat over medium heat until hot.
  2. POUR IN eggs. As eggs begin to set, GENTLY PULL the eggs across the pan with an inverted turner, forming large soft curds. CONTINUE cooking - pulling, lifting and folding eggs - until thickened and no visible liquid egg remains. Do not stir constantly. REMOVE from heat.
  3. SPREAD pizza sauce evenly on muffin halves; place on baking sheet. TOP with eggs and cheese, dividing evenly.
  4. BAKE in 450°F oven until cheese is melted, about 5 minutes. SPRINKLE with oregano.
